We roast on a 12 kg drum in the back room two mornings a week, in batches of 20 to 40 pounds. Nothing on the shelf is older than ten days.
Three origins at a time
Green coffee comes through two importers who publish what farms are paid. Three origins share the bar and rotate as bags run down.
A room to sit in
38 seats indoors, six sidewalk tables, an outlet at every table, and wifi that holds up on a work morning.
Baked before we open
Pastries come from our kitchen and two West Asheville bakeries, dropped off before the 7am open.
